My children love these banana muffins that I have adapted from a Dr Libby recipe. The best thing about them is there isn’t any added sugar and they are so simple to make.
4 ripe bananas
½ cup of honey (I often use a bit less)
½ cup of coconut oil
¾ teaspoon cinnamon
1 teaspoon of vanilla paste
2 ½ cups of spelt or gluten free flour
¼ teaspoon of baking powder
Preheat the oven to 160 degrees and grease some muffin tins
Place all the ingredients in a food processor and process until well combined
Pour the mixture into the muffin tins – don’t fill right to the top
Bake for 25-30 minutes until they start to go brown.
I make a mixture of mini and medium sized muffins and get at least 1 dozen of each
